Restaurant offerings to expand

A new development near the Lansing Holiday Inn Express will greatly expand dining options in Lansing about this time next year.

Fishman & Co., an Olathe-based developer, and the city of Lansing have signed an agreement that will bring a several restaurants to the 400 block of North Main Street.

Fishman already has secured commitments from Popeye's Chicken, Pizza Shoppe and Homemade Ice Cream to locate in the five-building, 38,000-square-foot development, said developer Scott Fishman.

In addition, the company is nearing completion of talks for a Chinese restaurant, a Mexican restaurant and a sandwich shop - either Subway or Quizno's - to locate in the center, Fishman said.

Dicsussions also are under way with a drycleaner and a high-end gift retailer to locate in the development, Fishman said.

Under the agreement with Fishman & Co., the city will provide an incentive package that includes tax abatements and about $570,000 in assistance with site preparation work.

The timeline calls for Fishman to take possession of the property by May, present its plans to the Lansing Planning Commission in August and break ground in September. Restaurant openings should come in March 2006.
